
This Waldorf chicken recipe is a tasty, healthy and warm variation of the traditional Waldorf chicken salad recipe. I loved it!
Serving Size: 6
Ingredients:
6 (5-6 ounces each) chicken boneless and skinless breasts halves
1 cup unsweetened apple juice
1/4 teaspoon ground ginger
1 tablespoon cornstarch
2 cups unpared red apples, chopped
2 stalks celery, sliced
3 tablespoons raisins
1 tablespoon sliced green onion
1 tablespoon lemon juice
Salt and pepper to taste
Directions:
- Place chicken, 1/2 cup apple juice and lemon juice in a non stick skillet. Season chicken breasts with salt and pepper to taste .
- Heat to boiling, cover and simmer for 20 minutes or until chicken is tender and done. Remove chicken from pan; keep warm.
- Mix remaining apple juice and cornstarch, stirring constantly. Add remaining ingredients and cook for 2-3 minutes.
- Arrange chicken on dinner plates; top with sauce and serve immediately.
