Ingredients:
1 pound boneless and skinless chicken parts (thighs, breasts)
1 bell pepper, seeded and cut into 1-inch pieces
1 onion, cut into 1/2 inch pieces
1 teaspoon all-purpose flour
1 cup sweet and sour sauce
1/2 cup all-purpose flour
1/2 cup vegetable oil
Salt and pepper to taste
Cooked rice
Directions:
- Wash chicken pieces and dry. Season with salt and pepper. Roll chicken in 1/2 cup of flour.
- Heat oil. Deep fry chicken until crispy. Remove and drain.
- Drain all but a small amount of oil from skillet and saute onion and bell pepper for 3-5 minutes. Add chicken and 1 teaspoon of flour to onions and peppers; saute for 2 additional minutes.
- Add sweet and sour sauce to pan. Cover and allow to simmer for 10 minutes. Serve over rice.
