Skewer Grilled Chicken

Ingredients:
2 pounds chicken breasts
1 teaspoon crushed garlic
1/4 teaspoon tumeric
1 teaspoon fish sauce
1 teaspoon lemon juice
1 teaspoon ground lemongrass
1/2 teaspoon paprika
1/2 teaspoon salt
1 teaspoon light soy sauce
1 tablespoon oil

Directions:

  1. Bone and skin chicken breasts. Cut into 1/4″ thick bite size chunks.

  2. In a bowl combine chicken with the remaining ingredients and mix well. Cover and refrigerate for 3-4 hours.

  3. Soak bamboo skewers in water 3-4 hours and start charcoal fire in grill. Thread chicken pieces onto skewers and grill about 3 minutes, turn and grill 3 minuntes more. Serve. It makes 6 servings.
