Sesame Chicken Fingers

You can serve the chicken fingers on a salad or just with the honey-mustard sauce.

Serving Size: 4

Ingredients:
1/2 cup sesame seeds
1/4 cup Parmesan cheese
1 pound boneless and skinless chicken breast, sliced into 2×1/2″ strips
2 tablespoons olive oil

Honey-Mustard Sauce
2 tablespoons mustard
6 tablespoons honey

Directions:

  1. In a small bowl blend mustard and honey for sauce. Set aside.
  2. In shallow pan combine sesame seeds and Parmesan; roll chicken pieces in sesame mixture.
  3. Heat olive oil in nonstick skillet or saute pan until just below smoking point. Add chicken strips and brown on both sides over medium heat; do not scorch.
  4. Place chicken strips on cookie sheet and bake in preheated 425F oven 8-10 minutes or until cooked through. Serve with honey mustard sauce.
