Oriental Chicken

Ingredients:
1 large boneless and skinless chicken breast, cut into slivers
1/2 cup onion, sliced
1/2 cup carrots, sliced
1/2 cup mushrooms, sliced
1 tablespoon peanut oil
1 garlic clove
2 tablespoons low, sodium soy sauce

Directions:

  1. Heat oil in a large skillet or wok. Saute all ingredients except soy sauce over high heat.
  2. Stir fry for 13 minutes and lower heat to medium and cook until chicken is cooked through – about 10 minutes. Toss with soy sauce.
