Nigerian Chicken Stew

 

Serving Size: 4

Ingredients:
1 (2-3 pounds) frying chicken, cut into serving-size pieces
1 (15 ounces) can tomato sauce with herbs
3 tablespoons oil
1 onion, chopped
2 garlic cloves, finely chopped
1 medium jalapeno pepper, finely chopped
Salt and black pepper to taste
2 cups cooked rice

    Directions:

    1. Season chicken pieces with salt and pepper.
    2. In a large skillet, heat oil over medium-high heat. Add garlic and onion; saute for 1-2 minutes. Add chicken pieces to skillet and sauté until brown.
    3. Add tomato sauce and jalapeno; bring to a boil.  Cover, reduce heat and simmer until chicken is tender, about 30 minutes (add some water, if it gets too dry). Serve over cooked rice.
