Grill Chicken with Havana Sauce
Ingredients:
8 chicken breasts , skin removed
Salt and ground pepper to taste
Lime juice to taste
Sauce:
28 ounces plum tomatoes, drained and chopped
1/3 cup olive oil
1/4 cup white wine
1 tablespoon white vinegar
3 green onions, chopped
4 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons cilantro, minced
Directions:
- In a large bowl combine all the ingredients for the sauce. Mix well, cover and refrigerate overnight.
- Heat an outside grill and let the sauce come to room temperature.
- Sprinkle the chicken with lime juice and with salt and pepper, as you like. Place on grill and cook for about 6 minutes per side or until brown. Brush the sauce on the chicken throughout the grilling and top each with more sauce when serving. It makes 8 servings.
