Ingredients:
8 boneless and skinless chicken breasts halves
Salt and ground pepper to taste
Lime juice to taste
Sauce:
1 pound plum tomatoes, chopped
4 tablespoons olive oil
3 tablespoons white wine
2 teaspoons white vinegar
3 green onions, chopped
3 garlic cloves, minced
2 teaspoons cilantro, minced
Salt and pepper to taste
Directions:
- In a large bowl combine all the ingredients for the sauce; season to taste with salt and pepper. Mix well, cover and refrigerate overnight.
- Heat an outside grill and let the sauce come to room temperature.
- Sprinkle the chicken with lime juice and with salt and pepper, as you like. Place on grill and cook for about 6 minutes per side or until brown. Brush the sauce on the chicken throughout the grilling and top each with more sauce when serving.
