Curry Chicken Recipe

Serving Size: 4

Ingredients:
3 pounds whole chicken, cut into serving size pieces
2 tablespoons vegetable oil
4 garlic cloves, finely chopped
2-inch piece ginger root, finely chopped
2 stalks lemongrass (white part only), chopped
2 teaspoons chili pepper flakes
2 tablespoons curry powder
2 medium onions, chopped
2 teaspoons sugar
1 teaspoon salt
1-1/2 cup coconut milk
1/2 cup water
Coriander leaves to garnish

Directions:

  1. Heat the oil in a large non-stick pan. Add garlic, ginger, lemongrass, chili pepper flakes and curry powder; sauté over medium heat for 3 minutes, stirring constantly.
  2. Add onion, chicken, sugar and salt. Sauté until onions are translucent. Stir well to coat chicken with curry mixture.
  3. Add coconut milk and water and bring to a boil. Reduce heat to low and simmer covered for 25-30 minutes or until the chicken is cooked through, stir occasionally.
  4. Garnish with coriander leaves and serve with rice.
