Ingredients:
3 pounds whole chicken, cut into serving size pieces
2 tablespoons vegetable oil
4 garlic cloves, finely chopped
2-inch piece ginger root, finely chopped
2 stalks lemongrass (white part only), chopped
2 teaspoons chili pepper flakes
2 tablespoons curry powder
2 medium onions, chopped
2 teaspoons sugar
1 teaspoon salt
1-1/2 cup coconut milk
1/2 cup water
Coriander leaves to garnish
Directions:
- Heat the oil in a large non-stick pan. Add garlic, ginger, lemongrass, chili pepper flakes and curry powder; sauté over medium heat for 3 minutes, stirring constantly.
- Add onion, chicken, sugar and salt. Sauté until onions are translucent. Stir well to coat chicken with curry mixture.
- Add coconut milk and water and bring to a boil. Reduce heat to low and simmer covered for 25-30 minutes or until the chicken is cooked through, stir occasionally.
- Garnish with coriander leaves and serve with rice.
