Curried Chicken Salad Recipe

Do you have some leftover chicken? Here it’s a great way to use it: cooked chicken combined with grapes, celery, almonds and mayonnaise, seasoned with curry powder. Note: Walnuts may be substituted for almonds and/or raisins (soaked in hot water and drained) for grapes.

Serving Size: 4

Ingredients:
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
2 tablespoons curry powder
2 cups cooked chicken, chopped
1/4 cup diced celery
1/2 cup seedless grapes, halved
1/4 cup almond slivers
Salt to taste

Directions:

  1. Blend mayonnaise, lemon juice, and curry powder.
  2. In a bowl, combine chicken, celery, grapes and almonds. Add mayonnaise mixture, mixing well. Season to taste with salt. Chill at least one hour before serving.
  3. Serve on whole leaves of romaine lettuce.
