
Do you have some leftover chicken? Here it’s a great way to use it: cooked chicken combined with grapes, celery, almonds and mayonnaise, seasoned with curry powder. Note: Walnuts may be substituted for almonds and/or raisins (soaked in hot water and drained) for grapes.

Ingredients:
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
2 tablespoons curry powder
2 cups cooked chicken, chopped
1/4 cup diced celery
1/2 cup seedless grapes, halved
1/4 cup almond slivers
Salt to taste
Directions:
- Blend mayonnaise, lemon juice, and curry powder.
- In a bowl, combine chicken, celery, grapes and almonds. Add mayonnaise mixture, mixing well. Season to taste with salt. Chill at least one hour before serving.
- Serve on whole leaves of romaine lettuce.
