Coriander Chicken Salad

Serving Size: 4-6

Ingredients:
1 cup coriander, chopped
3 scallions (including tops), minced
2 chicken breasts, boneless and skinless
3 tablespoons butter or margarine
1/4 cup sesame seeds, toasted
3 garlic cloves, minced
1/2 head of iceberg lettuce, shredded
Salt to taste

Sesame Dressing:
1 tablespoon dry mustard
1 tablespoon water
1/2 cup sesame oil
1/2 cup salad oil
1/4 cup soy sauce
3 teaspoons sugar
1 tablespoon lemon juice
1/4 teaspoon Chinese 5-spice powder

Directions:

  1. Cut chicken into strips. Fry chicken in butter and garlic until brown. Reduce heat and simmer until done. Lightly season with salt. Cool in the refrigerator.
  2. Toss cooled chicken with coriander, sesame seeds and scallions. Toss in sesame dressing (see below).
  3. Serve over a bed of shredded lettuce.

Sesame Dressing:

  1. Make a paste of mustard and water.
  2. Blend in other ingredients until homogeneous.
