
1. Bring a large pot of water to a boil.
2. Prepare a large bowl of ice water. Set it aside.
3. Cut a shallow X on the bottom of each tomato.
4. Drop the tomatoes into the boiling water (a few at a time) for 10-15 minutes or until skin begins to peel.
5. With a slotted spoon, remove tomatoes from boiling water.
6. Place tomatoes into the bowl with ice water. Allow tomatoes to cool.
7. Once tomatoes are cool, remove them from ice water and peel the skin, with your hands or with a small paring knife, starting where you cut the X.
