Chicken Stuffing Recipe

Here you find some stuffing recipes for roast chicken. To prevent bacterial growth, make sure that the chicken is stuffed immediately before cooking.

Bread Stuffing

Ingredients:
4 cups dry bread crumbs
1/2 cup butter
1 small onion, finely chopped
1 beaten egg
1 teaspoon salt
1/2 teaspoon celery seed
1 teaspoon dried sage
1/4 teaspoon pepper

Directions:

  1. Pour a sufficient amount of chicken broth or hot water over the bread crumbs to moisten them well.
  2. Melt the butter and allow it to brown slightly. Add the onion to the butter and pour this over the bread crumbs.
  3. Add the beaten egg, salt, celery seed, sage and pepper; mix thoroughly and stuff into the chicken.

 

Cracker Stuffing

Ingredients:
3 cups cracker crumbs
1 small onion, chopped
1/3 cup butter
1/2 teaspoon salt
1 teaspoon dried sage
1 teaspoon dried thyme
1/4 teaspoon pepper

Directions:

  1. Moisten the cracker crumbs with hot milk or water until they are quite soft.
  2. Brown the chopped onion with the butter and pour over the crackers.
  3. Add the seasonings, mix thoroughly, and stuff into the bird.

 

Green-Pepper Stuffing

Ingredients:
4 cups dried bread crumbs
1 cup stewed tomatoes
1/4 cup melted butter
2 tablespoons bacon fat
1 small onion, chopped
1/4 cup finely chopped green bell pepper
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/4 teaspoon pepper

Directions:

  1. Moisten the bread crumbs with the stewed tomatoes and add a sufficient amount of chicken broth or hot water to make the crumbs quite soft.
  2. Melt the butter and bacon fat, add the onion, green pepper, and the seasonings, and pour over the crumbs. Mix thoroughly and stuff.

 

Rice Stuffing

Ingredients:
2 cups steamed rice
2 cups bread crumbs
1 cup stewed tomatoes
1/4 cup chopped red bell pepper
2 tablespoons chopped fresh parsley
1 small onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
4 small strips bacon, diced and fried brown

Directions:

  1. Mix the steamed rice with the bread crumbs.
  2. Add the stewed tomatoes, red bell pepper, parsley, onion, salt, pepper, melted butter, bacon and bacon fat, and a sufficient amount of chicken broth or hot water to moisten well. Mix thoroughly and stuff the chicken.
