Ingredients:
2 carrots, chopped
1 onion, chopped
2 garlic cloves, finely chopped
2 cans cream of chicken soup
5 cups water
1 teaspoon oregano
1 teaspoon basil
2 boneless and skinless chicken breasts, cut into bite-size pieces
1 package (9 ounces) cheese tortellini
1 package (9 ounces) frozen broccoli, thawed
Freshly grated Parmesan cheese
Italian or French bread
Directions:
- Cook chicken in small amount of oil.
- In a large kettle, combine carrots, onions, garlic, water, cream of chicken soup, cooked chicken, basil and oregano. Simmer for 30 minutes.
- Add tortellini and frozen broccoli. Cook for 15-20 minutes or until broccoli is tender.
- Serve the soup with freshly grated Parmesan cheese and a loaf of Italian or French bread.
