Chicken Stew

 

Serving Size: 4

Ingredients:
2 whole boneless and skinless chicken breasts, cut into bite-sized pieces
2 tablespoons vegetable oil
3 garlic cloves, finely chopped
1 onion, chopped
1 (6 ounces) can mushrooms
3/4 cup chopped cabbage
1 (12 ounce) can tomato juice
Salt and pepper to taste

    Directions:

    1. Heat vegetable oil in large saucepan over medium-high heat. Add garlic and onion and sauté until tender.
    2. Add chicken pieces to pan and sauté for 2-3 minutes.
    3. Add mushrooms, cabbage and tomato juice. Season to taste with salt and pepper.
    4. Cover pan and simmer for 30-40  minutes.
