Ingredients:
4 cups cubed cooked chicken
2 tablespoons salad oil
2 tablespoons orange juice
2 tablespoons vinegar
1 1/2 cups mandarin oranges
1 cup pineapple chunks
1 1/2 cups green grapes
1/2 cup slivered almonds
1 1/2 cups diced celery
1 1/2 cup raw rice
1 1/2 mayonnaise
Salt to taste
Directions:
- Mix together oil, orange juice, vinegar and salt to taste. Add chicken and marinate in refrigerator overnight.
- Cook rice until tender in boiling water, drain, blanch with cold water, drain well.
- In a large bowl, combine mandarin oranges, pineapple, grapes, almonds and celery. Stir chicken mixture and rice. Add mayonnaise and mix well.
- Serve with crackers and lettuce or in pocket bread.
