Chicken Parmesan

 
Chicken Parmesan Recipe

Serving Size: 4

Ingredients:
12 ounces fusilli or penne
4 (5 ounces) boneless and skinless chicken breast halves
2 eggs, slightly beaten
1/2 cup all-purpose flour
1 cup breadcrumbs
3 tablespoons butter
1 cup freshly grated Parmesan cheese
1/2 cup grated mozzarella cheese
Salt and pepper to taste

Sauce
3 tablespoons olive oil
1 medium onion, peeled and chopped
3 garlic cloves, peeled and minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 (28 ounces) can crushed tomatoes
Pinch of sugar
Salt and crushed red pepper flakes to taste

Directions:

  1. Prepare the sauce: Heat olive oil in a sauce pan over medium-high heat. Add garlic and onions; sauté until onion is transparent. Add tomatoes, oregano, basil and sugar. Season to taste with salt and crushed red pepper flakes. Bring to a boil, then reduce heat to low and simmer uncovered for 20-25, stirring occasionally.
  2. Cook pasta according to directions on package. Drain and reserve.
  3. While sauce cooks, prepare the chicken: Pound the chicken between two sheets of plastic wrap to an even thickness of about 1/2 inch. Season chicken with salt and pepper.
  4. In a shallow bowl, mix together the breadcrumbs and 1/2 cup of the Parmesan cheese. Place flour and eggs in individual shallow bowls.
  5. Dredge the chicken breasts in flour, shaking off any excess, then in egg and finally in breadcrumbs, pressing into breadcrumbs to make them adhere.
  6. Preheat oven to 400F degrees. Heat butter in large skillet over medium-high heat. Add chicken breasts and fry them until golden brown, about 3-4 minutes per side.
  7. Place pasta in a baking dish and spread with tomato sauce (reserve 1 cup of sauce). Arrange chicken breasts on top of pasta and spread with remaining sauce. Sprinkle with mozzarella and remaining Parmesan cheese.
  8. Bake for 5-10 minutes or until cheese melts and browns. Serve immediately.

    I loved this recipe. Although I must say I left out the garlic because my daughter doesn”t like the smell. But even then it is delicious. Usually kids love fusilli because of their funny look.
