Ingredients:
4 boneless and skinless chicken breasts halves
1/4 cup flour
2 tablespoons olive oil
1/2 cup Marsala wine
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1/2 cup sliced mushrooms
1 tablespoon chopped parsley
Salt and pepper to taste
Directions:
- Season chicken breasts with salt and pepper to taste; dredge the chicken breasts in flour.
- Heat olive oil in a skillet. Sauté chicken breasts over medium heat until golden brown on both sides. Remove the chicken and set aside.
- Add wine to skillet and cook for 1 minute. Add lemon juice, chicken broth and mushrooms. Stir, reduce heat and simmer until sauce is partially reduced.
- Return the chicken to the skillet and pour the sauce over them. Cook covered for another 5-10 minutes.
- Serve the chicken covered with sauce. Garnish with chopped parsley.
