Chicken Marsala

Ingredients:
4 boneless and skinless chicken breasts halves
1/4 cup flour
2 tablespoons olive oil
1/2 cup Marsala wine
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1/2 cup sliced mushrooms
1 tablespoon chopped parsley
Salt and pepper to taste

Directions:

  1. Season chicken breasts with salt and pepper to taste; dredge the chicken breasts in flour.
  2. Heat olive oil in a skillet. Sauté chicken breasts over medium heat until golden brown on both sides. Remove the chicken and set aside.
  3. Add wine to skillet and cook for 1 minute. Add lemon juice, chicken broth and mushrooms. Stir, reduce heat and simmer until sauce is partially reduced.
  4. Return the chicken to the skillet and pour the sauce over them. Cook covered for another 5-10 minutes.
  5. Serve the chicken covered with sauce. Garnish with chopped parsley.
