Chicken Fettuccine Alfredo Recipe

Serving Size: 4-5

Ingredients:
10 ounces fettucine
1 pound boneless and skinless chicken breasts, cut into bite-size pieces
8 ounces fresh mushrooms, sliced
1 medium onion, chopped
2 garlic cloves, finely chopped
3 tablespoons butter
2/3 cup freshly grated Parmesan cheese
1 cup heavy cream
3 tablespoons chopped fresh parsley
Salt and pepper to taste

Directions:

  1. Cook fettuccine according to package instructions.
  2. While the fettuccine is cooking, melt the butter in in a large skillet over medium-high heat. Add onions, garlic and chicken; sauté until chicken is lightly brown.
  3. Add mushrooms and cook until mushrooms are tender. Season to taste with salt and pepper.
  4. Gradually add the heavy cream and Parmesan cheese. Bring to a boil; cook for 2 minutes, stirring occasionally. Stir in parsley and correct seasonings if necessary.
  5. Toss pasta with sauce. Serve immediately.
