Ingredients:
10 ounces fettucine
1 pound boneless and skinless chicken breasts, cut into bite-size pieces
8 ounces fresh mushrooms, sliced
1 medium onion, chopped
2 garlic cloves, finely chopped
3 tablespoons butter
2/3 cup freshly grated Parmesan cheese
1 cup heavy cream
3 tablespoons chopped fresh parsley
Salt and pepper to taste
Directions:
- Cook fettuccine according to package instructions.
- While the fettuccine is cooking, melt the butter in in a large skillet over medium-high heat. Add onions, garlic and chicken; sauté until chicken is lightly brown.
- Add mushrooms and cook until mushrooms are tender. Season to taste with salt and pepper.
- Gradually add the heavy cream and Parmesan cheese. Bring to a boil; cook for 2 minutes, stirring occasionally. Stir in parsley and correct seasonings if necessary.
- Toss pasta with sauce. Serve immediately.
