Chicken and Shrimp Casserole

 

Serving Size:  6

Ingredients:
1/2 cup flour
1 large frying chicken, cut into serving pieces
1 onion, diced
1 clove garlic
1 can tomato sauce
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon basil
2 teaspoons parsley
1 teaspoon paprika
1 can minced clams
1/2 pound mushrooms, sliced
1/4 cup sherry
1/2 pound shrimp, peeled and deveined

Directions:

  1. Dredge chicken in flour. Brown lightly in skillet. Place in casserole.
  2. Saute onion lightly. Add garlic, tomato sauce, salt, pepper, basil, parsley, paprika, clams with liquid, mushrooms and sherry. Simmer 10 minutes.
  3. Pour 2/3 of the sauce over chicken. Cover and bake at 350 degrees for 1 hour.
  4. When ready to serve, uncover casserole and add shrimp. Cover shrimp with remaining sauce and bake 10 minutes more at 350 degrees. Serve over rice.
