Serving Size: 4-6
Ingredients:
6 cups homemade chicken broth
1 cup ditalini pasta or other shaped little pasta
2 cups peeled and diced potatoes
1 1/2 cup chopped cooked chicken
1 onion, chopped
3 garlic cloves, minced
3 tablespoons vegetable oil
2 tablespoons chopped green onions
3 tablespoons chopped coriander
Salt and pepper to taste
Directions:
- In a large saucepan, heat oil over high heat. Add garlic and onion; sauté until tender.
- Add chicken broth, potatoes and pasta. Bring to a boil; then cover and simmer for 20-30 minutes or until potatoes and pasta are tender. Season with salt and pepper to taste.
- Ladle soup into individual soup bowls. Top each with green onions and coriander.
