Baked Chicken and Rice

Ingredients:
1 (10 ounces) package Virgo yellow rice
3 cups boiling water
1 stick margarine or butter, soft
Chicken legs, thighs or breast
Paprika (optional)

Directions:

  1. Preheat oven to 350 degrees.

  2. Grease oblong dish.

  3. Mix rice and margarine or butter. Spread on bottom of greased dish.

  4. Add boiling water on top, then lay chicken parts on top.

  5. Cover dish with foil and bake 1 hour at 375 degrees.

  6. Uncover and sprinkle with paprika and brown for additional 20 minutes.

(If you want, you can use 2 cups water “plus” one can of chicken broth.)

    Is the rice supposed to be cooked first before spreading it at the bottom of the dish?

    No, you don’t have to cook the rice first.
