Baked Chicken and Rice

Ingredients:
1 (10 ounces) package Vigo yellow rice
3 cups boiling chicken broth
1 stick margarine or butter, soft
Chicken legs, thighs or breast
Salt, pepper and garlic powder to taste
Paprika (optional)

Directions:

  1. Preheat oven to 350F degrees.

  2. Grease oblong dish.

  3. Mix rice and margarine or butter. Spread on bottom of greased dish.

  4. Add boiling water on top, then lay chicken parts on top. Season to taste with salt, pepper and garlic powder.

  5. Cover dish with foil and bake about 1 hour at 375 degrees.

  6. Uncover and sprinkle with paprika and brown for additional 20 minutes.

    No, you don”t have to cook the rice first.
